Step 3: Pick your icing. Icings include your choice of butter cream or fondant icing. Over the last year we have changed our butter cream icing to a more sophisticated form of butter cream. Sometimes it is referred to as "city" butter cream. Most of us are familiar with what is known as “country” butter cream, which is a mixture of powdered sugar, shortening, butter, and vanilla. “City” butter cream, sometimes called swiss meringue, is usually cooked over heat and includes egg whites, granulated sugar, unsalted butter, vanilla, or other flavorings.
